Low Fat Zesty Beef Stroganoff Recipe
Ingredients 2 cooked beef tenderloin steaks 1 teaspoon vegetable oil 1 medium onion --about 1/2 cup --cut into 2- by 1/4-inch strips 1/2 cup au jus natural-style gravy 2 tablespoons prepared horseradish 1 tablespoon tomato paste 4 ounces fresh mushrooms, sliced --about1 1/2 cups 1/4 cup fat-free sour cream 2 cups hot cooked rice -- or cholesterol-free noodles chopped parsley, optional Method 1.Cut tenderloin steaks into 1/4-inch slices. 2.In small bowl, mix gravy and horseradish. 3.Heat oil in a 10-inch nonstick skillet over medium-high heat. Saute onion in oil. Stir in beef, gravy, tomato paste and mushrooms; reduce heat to medium-low. Cover and cook 6 to 8 minutes, until hot. Just before serving, stir in sour cream. Serve over rice and sprinkle with parsley. Makes 2 servings. Preparation time: 25 minutes. Cooking time: 15 minutes.
