Low Fat Sweet Potato Pierogies Glazed With Raisins Pineapple &oranges Recipe
Ingredients 28 ounces sweet potato pierogies --2 packages 12 ounces crushed pineapple in juice 1/2 cup raisins 1/2 cup packed brown sugar 1 teaspoon ground cinnamon 1/4 teaspoon ground cloves 1 teaspoon cornstarch 11 ounces mandarin oranges, drained -- with liquid reserved Method 1.In large saucepan, over high heat, thaw frozen pierogies in boiling water for 5 minutes. Drain and set aside. Keep warm. 2.In large saucepan, over medium heat, stir together pineapple, raisins, brown sugar, cinnamon and cloves. Bring to a boil. 3.Combine mandarin orange liquid with enough water to make 2 cups. In small bowl, whisk together cornstarch and orange-water mixture. Add to saucepan. Heat until pineapple mixture reaches the desired consistency for a glaze. Stir in oranges, pour over pierogies and serve.
