Low Fat Sweet Pepper Relish Recipe
Ingredients 1 medium red bell pepper 1 medium yellow bell pepper 1 medium green bell pepper 2 tablespoons pine nuts, toasted 1 tablespoon chopped fresh or 1 teaspoon dried basil 1 tablespoon red wine vinegar 1/4 teaspoon salt 2 cloves garlic, crushed Method Set oven control to broil. Place bell peppers on rack in broiler pan. Broil about 5 inches from heat 12 to 16 minutes, turning occasionally, until skin is blistered and evenly browned. Place peppers in plastic bag; close tightly. Let stand 15 to 20 minutes. Peel peppers; remove stems, seeds and membranes. Chop peppers. Mix peppers and remaining ingredients.
