Low Fat Shrimp Scampi Recipe
Ingredients 1 teaspoon butter 2 teaspoons olive oil 3 garlic cloves, minced 1 pound shrimp, peeled 1/4 cup white wine 1 lemon, juice of 1/4 teaspoon salt 1/4 teaspoon ground black pepper 1/4 cup finely chopped italian parsley cooked noodles or rice, optional lemon wedges Method 1.In sauté pan, melt butter and oil. Add garlic; sauté 1 minute; add shrimp. Sauté 1 minute; add wine, lemon juice, salt and pepper. Sauté quickly until sauce reduces and shrimp turns pink, about 3 minutes. Do not overcook 2. Serve with sauce over cooked noodles or rice. Sprinkle with parsley; garnish with lemon wedges. Makes 6 servings. Preparation time: About 5 minutes. Cooking time: About 5 to 7 minutes.
