Low Fat Salmon Hash Recipe
Ingredients 1 tablespoon vegetable oil 1/2 cup chopped onion (about 1 medium) 1/2 cup chopped green bell pepper -- (about 1 small) 1/2 cup chopped red bell pepper -- (about 1 small) 1/4 teaspoon salt 1/8 teaspoon pepper 1 clove garlic, crushed 2 cups diced cooked potatoes (about 2 1 medium ) 1 can salmon (16 ounces) drained and flaked Lemon wedges Method Heat oil in 10-inch nonstick skillet over medium-high heat. Saute onion, bell peppers, salt, pepper and garlic in oil. Stir in potatoes and salmon. Cook uncovered, stirring frequently, until hot. Serve with lemon wedges. 4 SERVINGS (ABOUT 1 CUP EACH).
