Low Fat Pork With Onions Olives Peppers And Mushrooms Recipe
Ingredients nonstick spray coating 12 ounces boneless pork loin --cut into 1/4 inch thick slices --8 slices 1/8 teaspoon salt 1/8 teaspoon pepper 2 teaspoons olive oil 2 medium onions -- cut into thin wedges 2 medium green sweet peppers -- cut into thin bite-size strips 1/2 cup sliced mushrooms 2 cloves garlic, minced 1/2 teaspoon ground cumin 1/3 cup chopped pimento stuffed green olives Method Spray a large skillet with nonstick coating: heat over medium-high heat. Season pork with salt and pepper, cook half of the pork slices at a time in skillet for 2 to 3 minutes or till meat is browned and no longer pink in center. turning once. Remove from heat: keep warm.
