Low Fat Marinated Beef And Pasta Salad Recipe
Ingredients 1 pound mostaccioli or ziti 2 tablespoons vegetable oil 3 tablespoons lemon juice 2 tablespoons red-wine vinegar 1 tablespoon chopped fresh oregano 1 tablespoon chopped fresh thyme 2 tablespoons dijon mustard 1/2 cup fresh parsley, chopped 10 large mushrooms, sliced 2 cups flank steak or roast beef, julienned 2 cups halved snow peas 1 red bell pepper -- ribs and seeds removed, julienned salt, to taste freshly ground black pepper, to taste Method 1.Prepare pasta according to package directions; drain. 2.In large bowl, combine vegetable oil, lemon juice, vinegar, oregano, thyme, mustard, parsley, mushrooms and steak. Add snow peas and bell peppers; mix thoroughly. Add pasta and mix again. Serve immediately, or refrigerate 1 hour and serve cold. Makes 10 servings. Preparation time: 20 minutes.
