Low Fat Mango Mayonnaise And Shrimp Recipe
Ingredients 1/2 cup reduced-fat mayonnaise -- or light mayonnaise 1/2 cup mango puree -- fresh or thawed frozen 1/4 cup light sour cream 1/4 teaspoon salt 1/8 teaspoon pepper 2 tablespoons lime juice 8 ounces medium shrimp, cooked -- shelled and deveined 20 melba rounds or toasts Method In small bowl, combine mayonnaise, mango puree, sour cream, salt, pepper and lime juice. Spoon mayonnaise mixture onto melba rounds; top with a shrimp. Makes 20 servings. Preparation time: About 10 minutes.
