Low Fat Sweet Potato Biscuits Recipe
Ingredients 1 tablespoon shortening 1 cup flour 2 teaspoons baking powder 2 teaspoons sugar 1/4 teaspoon salt 1/4 cup cooked, mashed sweet potato 1/4 cup milk (1/4 to 1/3) Method Preheat oven to 400 degrees. Grease baking sheets or line with parchment paper. Sift together flour, baking powder, sugar, and salt; cut in shortening with a pastry blender or fork, until mixture resembles coarse meal. Stir in sweet potato and milk, mixing just until all dry ingredients are moistened. Drop remaining dough by spoonfuls onto baking sheet; or, roll out 1/2-inch thick and cut with a biscuit cutter.
