Low Fat Diabetic Low-fat Zucchini-tomato Casserole Recipe
Ingredients 1/4 c butter 3 med zucchini, sliced 1/8 inch thick 1/8 tsp garlic powder 4 med tomatoes, sliced 1/4 inch thick 1 lg onion, sliced 1/8 inch thick 1/2 lb fresh mushrooms, sliced 1/8 inch thick 1/2 cup mozzarella cheese, grated Method Preheat oven to 400 degrees. Saute zucchini in butter with very light sprinkling of garlic powder. Layer zucchini, tomatoes, onions, and mushrooms in 2-quart casserole. Top with cheese. Bake 15 minutes. Makes 6 to 8 servings.
