Low Fat Quick Chicken Cacciatore Recipe
Ingredients 1 tablespoon olive oil 1 1/4 cup thinly sliced fresh mushrooms -- shiitake, portobello, crimini -- or a combination 1 package italian-seasoned boneless chicken breasts - about 1 pound 16 ounces low-sodium tomatoes 1/2 teaspoon italian seasoning salt, to taste ground black pepper, to taste 9 ounces fresh fettuccine, cooked and drained Method 1.In large nonstick skillet, over medium heat, heat oil. Add mushrooms; sauté until golden, about 2 to 3 minutes. Remove mushrooms from skillet; reserve. Add chicken to skillet; sauté until browned and cooked through. 2.Return mushrooms to skillet; stir in tomatoes, Italian seasoning, salt and pepper. Cover and simmer 5 minutes. Serve over fettuccine. Makes 4 servings. Preparation time: About 5 minutes. Cooking time: About 18 minutes.
