Low Fat Couscous Porridge Recipe
Ingredients 2 cups skim or low-fat milk 1/3 cup chopped dates 1 tablespoon honey -- or to taste 1 teaspoon pure vanilla extract 2/3 cups couscous -- preferably whole-wheat Method In a saucepan over medium heat, combine milk, dates, honey and vanilla; heat until almost boiling. Stir in couscous and remove the pan from the heat. Cover and let stand until the couscous has absorbed most of the liquid, about 5 minutes. Stir until creamy. Divide between 2 bowls and serve. Makes about 2 cups, for 2 servings. 425 calories per serving: 17 grams protein, 2 grams fat (0. 3 gram saturated fat), 89 grams carbohydrate; 130 mg sodium; 4 mg cholesterol; 3 grams fiber.
